Ingredients / for 2 servings
- 400ml of water
- 3 pieces of Shiitake mushrooms or other mushrooms you like
- 1 handful of spinach or 1 piece of Chinese cabbage
- 100g of tofu
- 1/3 of aubergine
- 2 - 3 tbsp of our brown miso paste
- Half of a spring onion
Instructions
- 1. Thinly slice the mushrooms. Cut the Chinese cabbage into bite-sized pieces. Dice the tofu. Slice the spring onion into rounds.
- 2. Boil water in a pot.
- 3. Once the water is boiling, add the mushrooms, vegetables, and tofu to the pot.
- 4. When the mushrooms and vegetables are cooked, turn off the heat.
- 5. Dissolve the miso in the pot using a fine-mesh miso strainer.
- 6. If you don't have a fine-mesh miso strainer, scoop some hot water into a ladle, add the miso to the ladle, and dissolve the miso in the ladle before adding it to the pot.
- 7. Serve the miso soup in bowls and garnish with spring onion on top.
