Seasoned Rice with Vegetables (炊き込みご飯)

Thanks to the umami of shoyu koji, there’s no need for dashi or cooking sake. This is a simple yet flavorful rice dish cooked with a variety of ingredients. Seasoned rice with vegetables, known as “takikomi gohan,” is a popular dish in Japan. You can add any vegetables you prefer. For those in the Netherlands, this delightful dish is an excellent way to experience the rich taste of shoyu koji, enhancing the flavors of the ingredients and providing a satisfying meal.
Ingredients
- 3 cups of white rice
- 3 cups of water
- 1/2 carrot
- 2 mushrooms
- 4 tbsp of Shoyu Koji
- 1 tbsp of Shio Koji
Instructions
- 1. Rinse white rice.
- 2. Add water, Shio Koji, and Shoyu Koji to the rice cooker.
- 3. Cut the vegetables into bite-sized pieces and place them on top of the rice mixture from Step 2. Do not mix too much.
- 4. Let the rice soak for 15 to 30 minutes.
- 5. Start the rice cooker and let it cook until done.
