Ingredients /Serves 2
- 150g ground pork or vegan ground meat
- 200g bean sprouts(Taugé)
- 1 clove ginger
- 2 spring onions
- 1 tsp vegetable oil
- 1 tsp sesame oil
- A:1 tbsp cooking sake or white wine
- A: 1 tbsp mirin
- A: 1 tsp sugar
- A: 1 tsp soy sauce
- A: 1 tbsp brown miso
- A: 3 tbsp water
- A: 1 tsp potato starch or cornstarch
Instructions
- 1. Finely chop the ginger. Trim the roots off the spring onions and slice them thinly. In a bowl, mix all the ingredients in section A.
- 2. Heat vegetable oil and ginger in a frying pan over low heat. Once fragrant, add the ground meat and cook over medium heat, breaking it up as it cooks. Once fully cooked, add the mixed sauce (A) and simmer until thickened.
- 3. Place the bean sprouts in a microwave-safe container and microwave at 600W for 3 minutes. Drain excess water and mix in sesame oil.
- 4. Place the bean sprouts on a plate, top with the miso crumble, and sprinkle with chopped spring onions. Enjoy your flavorful and nutritious Taugé with Miso Crumble!!
