A Celebration of Summer and Biodiversity In the Netherlands, the blooming of the elderfleur bushes marks a sensory turning point in the year—a joyful signal that winter is truly behind us. Beyond its nostalgic cultural roots, this plant plays a vital role in our local ecosystem. Its dense clusters of creamy white blossoms serve as a sanctuary and an essential food source for wild pollinators, from honeybees to delicate butterflies.
By bringing these hand-picked blossoms into the spotlight through fermentation, we aim to celebrate the vibrant beauty and fragility of local biodiversity.
