This exquisite miso paste, fermented over a mid to long period in barrels, is a tribute to traditional methods that yield superior flavor and quality. Our Barley Miso teases your taste buds with a rich umami profile, a hint of roasty flavor, and a subtle sweetness resulting from the Barley Koji.
Available in two base options – Soybean and Chickpea, the availability of this paste changes with each batch. Our ingredient list is a testament to our commitment to quality: Barley and Chickpeas sourced from EKOTO, a farmer in the Netherlands; Soybeans from local supplier Rechtreex, with a shift to using nlsoya starting this year, expected to be ready by the end of 2023; and Salt imported from the French supplier VehGro. To further enhance the authentic flavor, we use Koji spores directly from Japan (Hishiroku/Akitakonno).
We are proud of our efforts to establish direct contracts with organic farmers and producers. This approach allows us to ensure that the ingredients we use are of the highest quality, while also helping us to shorten the supply chain and contribute to a more sustainable food system.
